- 1 cup - raw cashews
- - zest of half a lemon
- 2 tsp - apple cider vinegar
- 1 - clove of garlic
- 1 tsp - dijon mustard
- 1 tsp - olive oil
- - pinch of salt
- Soak cashews in one and a half cups of water for one hour.
- Drain cashews and blend with all the other ingredients until thick and smooth.
- Cashew cream will be happy in the fridge for up to a week stored in an air tight container.
