  • 1cup - raw cashews
  • zest of half a lemon
  • 2tsp - apple cider vinegar
  • 1 - clove of garlic
  • 1tsp - dijon mustard
  • 1tsp - olive oil
  • pinch of salt


  1. Soak cashews in one and a half cups of water for one hour.
  2. Drain cashews and blend with all the other ingredients until thick and smooth.
  3. Cashew cream will be happy in the fridge for up to a week stored in an air tight container.
