The beetroot has a natural sweetness so this is a great ‘bridging’ meal when you are trying to ease the palate off sugary foods and adjust the tastebuds.
- 5 - Eggs
- 100g - Feta cheese
- 1 - Small beetroot
- 1/4 - Avocado
- 1tbsp - Butter
- Crack 5 eggs, grate a small beetroot and add the feta into the same bowl then whisk all together.
- Place butter into a heated pan and pour in the mix gently stirring as the eggs scramble.
- Serve onto plates and place chopped avocado on top and stir through.
