The beetroot has a natural sweetness so this is a great ‘bridging’ meal when you are trying to ease the palate off sugary foods and adjust the tastebuds.


  • 5 - Eggs
  • 100g - Feta cheese
  • 1 - Small beetroot
  • 1/4 - Avocado
  • 1tbsp - Butter


  1. Crack 5 eggs, grate a small beetroot and add the feta into the same bowl then whisk all together.
  2. Place butter into a heated pan and pour in the mix gently stirring as the eggs scramble.
  3. Serve onto plates and place chopped avocado on top and stir through.

Serves 2 adults
